So, to make sure each class is not just a party but a reunion, we’d like to introduce some of our Ro’Regulars. Many of us have a sweet tooth, but few of us crafted our own way to indulge in a healthy way. That is, except for Louisa Mesquita Bakker, our resident keto chocolate queen. Keep reading to find out about her ketogenic lifestyle, her usual order from The CPJ and what Rocycle means to her.

Hi Louisa! Thanks for taking the time to chat with us today. Can you tell us a bit about yourself?

Hi there! My name is Louisa Mesquita Bakker, and I’m 24 years old. Since I can remember, I have been passionate about health, sports and nutrition. So this year, I started my new business called Keto Cacao. Functional chocolate, high in healthy fats and a high percentage of cacao, without using sugar, milk, soy or fillers. I’m Dutch-Brazilian but born and raised in Amsterdam. My mom is from Brazil, and my father is Dutch. They met here in Amsterdam while my mom was studying, and the rest is history. We still visit my Brazilian family every year. It’s a beautiful country that will forever have a place in my heart.

Sounds like a great mix to us! Can you tell us how you came to Rocycle?

I like to challenge my body by regularly switching up my workouts. When I first heard about Rocycle from one of my friends, I signed up for a class the same week. Oh my, it was intense, but I felt so grateful afterward. In a way, it’s quite spiritual. It’s me, my mind, the music and the bike.

We hear you’re ketogenic! Would you be able to walk us through what that is exactly?

For over a year now, I’ve eaten a keto-based (ketogenic) diet, which means consuming whole foods high in healthy fats, moderate protein and low in carbs and sugar. A decrease in carbs sets your body into a metabolic state called ketosis. Ketosis occurs when your body has run out of its glycogen (basically sugar) stores, so it needs to find another fuel source. When this happens, your liver starts to process fat into ketones, which become your body’s main fuel source. Eating keto-based has really changed my life. I haven’t felt this good in…forever! I feel more satiated after a meal, I have less body fat, no more sugar crashes, less inflammation and way more energy and mental clarity.

Wow that sounds pretty intense. How do you fuel yourself on a ride day then? And what fridge and pantry essentials do you have on hand to make this easy and delicious?

Before a ride at Rocycle, I fuel myself by drinking a homemade smoothie with avocado, MCT oil (it’s derived from coconuts and provides the brain with an almost instant energy boost), unsweetened almond milk, cacao powder and spinach. It’s so satisfying and gives me long lasting power. Since starting my own chocolate brand, I regularly have a Keto Cacao bar (or two) with me. Besides that, I never run out of MCT oil at home for my smoothies or morning coffees. I also like to have avocados, pecans, macadamia nuts, coconut oil, avocado oil, fatty fish, leafy greens and eggs. It’s so easy to make a quick breakfast or lunch with these ingredients, and it keeps me satisfied and energised for a long time.

When you don’t make your own smoothies, what do you like to grab from The CPJ?

My favourite drink is the Matcha & Maca with almond milk or a smoothie with lots of avocado.

Mmmm that latte is prettttty tasty. So we’re curious about Keto Caco. Tell us a little bit more about it?

So, KC is a functional chocolate bar, high in healthy fats and nutritious cacao. We easily reach up to 75% cacao in our Dark bar, without using sugar, dairy, soy or fillers. By making KC without sugar, we preserve the nutritional properties of cacao. This means nothing will block the absorption of cacao’s antioxidants but still ensures outstanding flavour. I started in March this year with a test batch for Keto Cacao because I love chocolate but couldn’t find something that fit my new lifestyle. I started with only selling online, and this went extremely well. This summer, we were out of stock of our trial bars, which gave my small team and me the ability to take it to the next level and finalise and improve the recipe before going “live” again on our web shop. This month, we will finally be fully operational again, and I’m super excited to share what we’ve been working on.

We’d like a bar! Alright, we’ve got one more question for you. What does Rocycle mean to you?

Rocycle is a place to feel alive and active and to push boundaries, all things you can employ in your daily life.
